Cranberry and Almond Biscotti

Delicious, crisp, fruity and chocolately! I made these for a good friends Italian themed birthday lunch and they went down a treat! Enjoyed perfectly at the end of a meal alongside coffee and chocolates, this cranberry and almond biscotti recipe is fail-proof!


  • 2 cups plain flour
  • 1 ½ tsp baking powder
  • 3/4 cup caster sugar
  • 3 eggs, lightly beaten
  • 2 tsp vanilla extract
  • 1 Tbsp finely grated orange rind
  • 1 cup dried cranberries
  • 1 cup blanched almonds


  1. Preheat your oven to 160°C
  2. Sift the flour and baking powered into a bowl. Add the sugar and mix to combine
  3. Add the eggs, vanilla, orange ring, cranberries and almonds and mix until a smooth dough forms
  4. Place the dough on a well floured board and knead until smooth
  5. Roll the dough into a 25cm long log and flatten the top slightly
  6. Bake in the oven on a lightly floured and greased tray for 30-35 minutes or until baked through
  7. Set aside to cool completely
  8. Using a sharp serrated knife, cut the logs into thin slices and place on baking trays lined with baking paper
  9. Bake for 8-10 minutes or until golden and crisp. Leave on the trays to cool completely
  10. When cold, coat half of each piece in melted white or dark chocolate
  11. Enjoy with hot coffee!
